What are the gauge of material for sheet pans?
Chicago Metallic Bakeware’s aluminum sheet pans are available in 12, 14, 16, 18, and 20-gauge.
Stainless steel is 20-gauge, 304 grade.
Aluminized steel is 22-gauge.
What is the difference between glaze & DuraShield?
Our AMERICOAT® ePlus glaze is an FDA-approved silicone-based glaze that we apply at our factory. DuraShield® is an FDA-approved dark non-stick fluoropolymer coating. AMERICOAT ePlus cuts down the need for oil and parchment use and DuraShield completely eliminates the need for these products. Both coatings greatly simplify pan clean up.
How long does glaze last?
Glaze coatings will last approximately 600 releases. This depends on the product you use and how well you care for your pans. Pans used for baking products with a high sugar content may not have as many uses as non-sugary products. Schedule a consultation to learn more.
How long does DuraShield last?
Our DuraShield coating will last for approximately 3,500 releases.
What is the maximum baking temperature?
The max baking temperature of any of our pans is 700° Fahrenheit.
Can I buy direct or do I need to purchase through a distributor?
Purchases must be made through a distributor. Please see our Where To Buy tool.
How quickly can you ship orders?
All pan orders are shipped within 48 hours of order placement.
Are your pans commercial grade?
Yes, all of our pans are constructed of commercial grade material.
Do I have to purchase by the case?
There will be a broken case charge of $10 if you purchase outside of the case pack.
What is the minimum order size?
Our typical minimum order is a case.
What types of cleaners/cleansers can be used on the pans?

We ship directly from our factory in Humboldt, Tennessee USA 38343.
Do you reglaze?
Yes! We can refer you to the nearest Pan Glo facility for the cleaning, straightening, and reglazing of your Chicago Metallic Bakeware pans.
Do you sell used pans?
Yes, we sell used full-size sheet pans. We offer these pans either washed (plain) or glazed. Please visit our Pre-Owned Sheet Pans page to view our current inventory.
Can your pans be used in conveyors?
Yes, we supply a variety of stock pans and can customize any pan we offer to work with conveyor systems.
Can I order a sample pan?
Please contact your Chicago Metallic sales representative if a test sample is required.
Do you provide custom pans?

What is aluminized steel?
Aluminized steel is steel that has been hot-dip coated on both sides with an aluminum-silicon alloy. The silicon provides adherence of the aluminum which then protects against corrosion. With proper care, aluminized steel bakeware will perform exceptionally well.
What is BĀKALON?
BĀKALON pans from Chicago Metallic Bakeware are constructed from high-strength aluminum with a durable hardcoat anodized surface that will not chip, peel, rust, or interact with food, and is safe for use with metal utensils. The dark surface color also absorbs heat when in the oven, allowing for faster baking times at lower temperatures.
What is pre-seasoned BĀKALON?
This pan comes pre-seasoned with AMERICOAT ePlus, the leading silicone coating technology used on all Chicago Metallic glazed pans. Using breakthrough silicone resins to achieve unparalleled results, AMERICOAT ePlus is specifically formulated for bakeware applications and is suitable for contact with food per FDA code 21CFR175.300. This coating provides up to 30% more releases than other silicone glazes, reduces bread and cake pan oil usage up to 50%, is PFOA and PTFE-free and helps reduce staining.
